Corn, Corn, Corn

Tis the season for yummy, sweet, farm fresh corn! All you need to do is drive down a country road and you will find signs left and right for delicious corn.

We grabbed 4 dozen from the local farm stand and got ready to freeze! Jon shucked them all, thank goodness since it is a bit tedious, and 48 is a big number! I blanched them all for about 6 minutes and then removed the kernels from the cob with a sharp knife. I ended up with 13 3 cup bags of corn for the freezer. These will be a welcome treat this winter for sure!

36$ for store bought corn vs. 16$ and about 1 hour of processing time. Not to mention the fuel saved from buying local and supporting a local farmer. Did I mention I like buying local?
