What to Make With Your Crop Share! Spaghetti Carbonara

Usually by dinner time I have an idea of what we will be having. But today we were running around all day so when it came time to make dinner I found myself without a clue! I was standing in the kitchen with about a 3o minute window of quiet, thank you Mama Mirabelle. I had a huge box of fresh veggies from our CSA and a fridge with a random assortment of leftovers. Now, usually these "dinners" usually aren't worth sharing but tonight something went very right and I had to share!

All of the kids liked it, I liked it, Jon is still at work so he hasn't tried it yet. Poor Jon:( And all of the ingredients are farm fresh (except the pasta.) Overall a great dinner! Oh and it was finished just in time!


Spaghetti Carbonara with Fresh Garden Vegetables

2 Tbs olive oil
3 cloves of garlic chopped
1 onion sliced into thin rings
1/2 cup green beans chopped into 1/4 inch pieces
1 cup fresh corn
1 cup chopped tomatoes
3 Tbs chopped basil
2 eggs
1/4 cup cheese of your choice
2-3 cups cooked pasta (leftovers from the night before are great!)

Heat the oil over medium heat in a large frying pan. Add the garlic and onions. Saute until soft. Add the green beans, corn, tomatoes, and basil. Cook over medium heat for about 5 minutes or until the veggies begin to soften, add the pasta and cheese and cook for another 3-5 minutes or until the cheese has melted but is not bubbling. Now for the fun part! Scoot all of the veggies and pasta over to the side of the pan and crack 2 eggs into the empty side of the pan. Allow the eggs to begin to harden ~ 1 minute and then begin stirring the eggs into the pasta. Yes you are stirring mostly raw eggs into the pasta. Don't worry keep stirring with the heat on medium and you will start to see the eggs cook and combine with the pasta! Finally add salt and pepper to taste ~ 1/2 tsp salt and 1/4 tsp pepper is what I used. All amounts and cooking times are approximate.

I think this would have been awesome with a slice of crispy garlic bread and a glass of wine. Sadly no time and no wine but it was delicious just the same!
