How beautiful are these beets? There are two different varieties in this picture. The standard deep red and these gorgeous pink and white ones! I never would have thought to buy these at the grocery. One other reason I love our CSA, it gives my family and I the chance to try such a wide variety of foods that we never would have tried without it.
Roasting the beets with white and red onions really brought out their natural sweetness. They were DELICIOUS & NUTRITIOUS!!

Roasted Root Vegetables
5 medium beets quartered
2-3 white or red onions sliced into rings
5 small potatoes quartered (optional)
3 large carrots cut into 1 inch pieces (optional)
Place veggies on a baking sheet and toss with olive oil, salt and pepper. Roast for 45 minutes at 400F or until soft.
