Kid Friendly Freezer Meal

My basement freezer is stocked!

Since this happens to be one of the most searched for topics on my blog I believe it is time to add to the recipes. This is my favorite lasagna recipe and it freezes beautifully. The recipe calls for a large 9 x 12 pan but I use 2 small 8x8 bake pans. This way I make 2 dinners. For our family one 8x8 is PLENTY and we still have leftovers. Schedule to make lasagna one day this week for dinner and freeze the other half. Just like that you already have one meal in your freezer ready to go.

* I don't use the goat cheese in this recipe. I am usually a huge fan but for some reason I like this recipe much better without it.
** I have replaced the turkey sausage with ground beef, buffalo, and emu from our Meat CSA and it turns out lovely. Just be sure to season the meat well with salt, pepper, and italian spices.
*** Remember, if you are freezing it DO NOT BAKE IT! Put it into the freezer wrapped tightly in aluminum foil (recycled of course) UNCOOKED.
**** You can take it out to defrost the night before or cook following the above instructions. Keeping in mind that you will need to add another hour or so to the cook time if you are putting it into the oven frozen.

  3. What do you freeze your meals in? I can't tell from the picture - do you have tupperware-like containers or the disposable (but washable and reusable!) containers from the grocery store? Since everyone's favourite Bad Bar customer loves lasagna, I thought I'd try this on Sunday. Thanks! - Abby

  4. I use glass or casserole dishes. And then if I run out I grab a few of the aluminum ones from the grocery store. Not the best since they aren't really re-usable but at-least they are from recycled aluminum. Oh, and you want to seal them really well before they hit the freezer. Exposure to air is what causes freezer burn. And don't forget to label them along with the reheating instructions!

  6. ok, two logistical questions:
    a) how do you assemble this then wrap it in tin foil? do you just put the foil over the top of the pan? put the foil in the pan and then assemble on top of the foil?
    b) also, my least favorite job is decasing the sausage (also, it's time-consuming). any tips?

    1) assemble the lasagna in whatever you are going to freeze it in. any 8x8 pan will work. Then when you are finished putting it together, wrap it tightly with foil (around the outside of the container.)

    2) hmmm agreed, couple options. most butchers/ grocery stores will carry the sausage without the casing just ask the person behind the counter. If they do not well, get your husband to do it:) OR cut the casing on one end of the sausage. hold the other tip in your right hand, and then grab the sausage with your left hand at the top of the sausage, close to your right hand and milk it out. It is messy but comes out pretty easily...
