Family Friendly Freezer Meals

I am always trying to figure out ways to simplify my life and with 3 small boys this is no easy task!! I don't want to spend hours away from them preparing food but I do want them to eat nutritious and unprocessed food if possible. I am lucky to have kids who LOVE their veggies and rarely do I even have to cook them. But that is where the ease of feeding this group healthy meals ends. C's favorite lunch, dinner, snack etc... hotdogs or chicken nuggets and really that's where the variety ends. Lately I have talked him into eating chicken or ribs but I have to tell him they are dinosaur bones.... boys:) So instead of completely caving I found a great recipe for chicken nuggets and meatballs. No more "Tyson's bag of chicken strips" so easy but one of my dirty little secrets...

First on the list MEATBALLS!! I love comfort food and really there is nothing better than homemade meatballs or as C likes to call them dinosaur b.... well you know:) So last week I used 9lbs of ground beef and made 70 meatballs. After they were finished cooling I froze them individually on cookie sheets and then stored them 10 at a time in freezer bags. Now whenever I need a quick dinner all I need to do is warm them up on the stove with some of my homemade canned spaghetti sauce and serve over pasta. I also like to toast a hoagie bun, add meatballs with sauce and top with mozzarella. YUM

Second CHICKEN NUGGETS! I used two whole chickens and ended up with about 4lb of nuggets (plus leftovers for chicken stock). Following the same freezing process as the meatballs they are down in the freezer and ready to go. Since they are cooked through all you have to do is grab a few and put them in the microwave to be heated. We have had them for lunch a few times already this week and everyone liked them!. How cool is THAT? Pasture raised chicken nuggets. And just as easy to serve as Tyson's?
