The day started out well, C to school and the twins to a doctor's appointment. Had to pick up the crop-share from friend's house and we even had time for a quick visit, so fun! Picked C up from school, all 3 had a nap so I had time to make a yummy dinner with all the veggies! Kids woke up and ate a remarkable amount of spinach, asparagus, and peas for a snack. The spinach and asparagus I had cooked for dinner and the peas they just ate. And the BEST part of the day...... We all sat down at the dinning room table and ate dinner together. (I weep with joy!!)
Jon and I took turns telling stories to keep the kids entertained. C liked it so much that we told him if he ate another bite we would tell him another story and for the most part it worked! He didn't eat his quiche but he ate his whole salad with goat cheese! The twins as usual ate like crazy. Truly a WONDERFUL day.
So for dinner I made a quiche using eggs, milk, white summer onions, asparagus, spinach and salt and pepper. Baked in the oven, easy and delicious. Also a quick salad with all of the yummy greens, white radishes, chives and goat cheese. I had forgotten that I had goat cheese and in retrospect would have added some to the quiche before I cooked it. Instead I sprinkled a bit on the top and melted it. Turned out great! One of the few meatless dishes I can get away with around here.
