I had high hopes for today. I was thinking pool time and fun family dinner... Well the thunderstorms and sick 3 year old changed our plans. Instead of hanging out with dad at the pool we spent time hanging out with a sad 3 year old. Poor guy:( By the end of the day he was feeling better and LUCKILY I had thrown a rack of lamb ribs into the crock pot this morning for dinner. At least the rest of the family would have something yummy to eat. This is the BEST and easiest recipe I have found for ribs. I have tried it with every variety of rib out there, beef, pork, lamb. They all turn out great. Grab your crock pot in the morning, add your ribs and cover with your favorite barbecue sauce. Set the crock pot to cook for about 6 hours. These ribs are fall off the bone, delicious and moist!! Be sure to completely cover the ribs with sauce, it is always better to use too much barbecue sauce than too little. If you don't add enough your ribs will be dry and that is just wrong! I really like Bulls Eye Original barbecue sauce but have also used Kroger brand and they still taste great.
All of our meat is from Old Pine Farm CSA. Every month we get a great variety of meats from them. Usually a chicken or two, some pork, lamb, beef, bison, and the occasional emu streak. I love trying to figure out what to do with all of the different varieties and cuts of meat. But when you are in a pinch and there are ribs in the house....... Barbecue Ribs in the Crock Pot!!
